Polypropylene trays and lined bagasse boxes hold heat through a full route, and the lined bagasse will not go soft under stew or gravy the way plain compostable boxes do.
The Sunday night call
A Dublin meals on wheels service rang on a Sunday night. They were opening on Monday without stock. We were on the road to Dublin at 5am and the delivery was done by 10.
No policy covers that. It is just what you do when a kitchen is going to open on Monday without trays. It is also why the stock sits in Ennis and not on a ship.
